Last year, Chrissi made jam with roasted strawberries and an orange liqueur.  It was so delicious that it was devoured in far too short a time.  This year, I quadrupled the recipe after our successful U-Pick adventure and upped the ante with genuine Grand Marnier. 

 

INGREDIENTS:

4 cups strawberries, hulled and quartered
1/2 cup sugar
2 tablespoons Grand Marnier, Cointreau, Triple Sec or orange liqueur (with one extra splash for good luck)

 

METHOD:

Pre-heat oven to 250 degrees.

Mix together strawberries, sugar and liqueur in a large bowl and let sit for 10 minutes.

Transfer strawberry goodness to a lipped baking sheet or sheets and place uncovered into oven for 2 hours or until the berries are a bit soft and shriveled, mixing once or twice as they are baking.

Mash, puree or just can them as is.

 

Chef’s Notes:

I just transferred the berries to cans without mashing.  I think this will make a great topping for ice cream!

The flavor of the Grand Marnier was so exciting, I flambed the remaining batches of regular jam while they were cooking on the stove.  Delicious!
