Grilled Romaine tastes great and the textures add a lot to the dish. The shaved roots each bring a different texture, color, and flavor to the salad that play well off each other to please the palate and eye. The dressing brings everything together.

This dressing was designed for the Radish Meyer Lemon Salad, but would go well with many other things. Perfect with shrimp or grilled swordfish, or grilled chicken or asparagus. Nice on fava beans too. If you want to keep this dressing for more than a couple days, strain it through a fine mesh strainer to remove the mint shreds which will discolor and start to taste swampy after a couple days.

A simple salad of fresh and bracing flavors. Just right to cut through heavier cold weather fare. The light orange dressing adds sweetness that complements the flavors. A mandolin is best for making this salad, especially the Japanese Ben-Riner type with the fine comb for the carrots.

radishes

Walk into many a taqueria and there they are. Sitting next to the pickled jalapenos and the lime chunks, there is usually a bowl of radishes. I asked a friend of mine, who is of Mexican descent, about why this is, and she did not have a concrete answer. Her surmise is about the same as mine-they are cheerful looking and look nice on a plate, and the cool crunch and hint of heat are welcome foils for the sometimes oily meats and density of refried beans.

Inspired by South Western flavors and things you find in a taqueria, this is a colorful dish with a mildly piquant flavor.

INGREDIENTS:
1 bunch of radishes, Purple Plums, Cherry Belle, what have you, washed well
5-6 scallions, roots sliced off and cleaned, outer skin of white part removed with a paper towel
Olive oil as needed
1 tablespoon unsalted butter
1 teaspoon each cumin seed and coriander seed, freshly ground
Salt and pepper to taste
1 juicy lime, halved

These radishes are plum sized and colored, but unlike plums can pack a bit of heat. Here, I “quickle” them and use a dressing that helps mitigate the heat. The idea for this comes from taquerias, where there is always cilantro, sour cream and frequently radishes. I cheat, though, and use yogurt instead of sour cream.

Here is a variation on a theme. I love the cucumber salad called sunomono that you get in Japanese restaurants. Long ago, when I had a sushi bar of my own, I used to experiment with this technique, using whatever vegetable struck my fancy.
